Peppy Broccoli Bites

This product was the inspiration for our Farmers' Market Days series. 

This is a Jackson favorite and for good reason. 

The sauce base is sunflower seeds, but the flavor comes from the combo of the soaked Jalapeño and red pepper with nutritional yeast to make it cheesy. So good.

Ingredients: *Broccoli, *sunflower seeds, *red bell pepper, *Jalapeño pepper, nutritional yeast, *garlic, *lemon juice, *extra virgin olive oil, Himalayan salt. *Organic

($\beta$-thioglucosidase) is a plant defense enzyme, found abundantly in raw cruciferous vegetables like broccoli, mustard, and wasabi, that breaks down glucosinolates into health-promoting bioactive compounds, including sulforaphaneand isothiocyanates. It acts as a defense mechanism against herbivores and is highly sensitive to heat, often destroyed by cooking. 

However, if you chop the broccoli and let it sit before you expose to heat you will still retain the benefit. We use gentle heat provides extra prevention of loss of enzymes.
